Vermont's Whole-Animal Butcher, Café & Community Market

From custom-cut steaks to artisan baked goods, Brownsville's beloved market has fed the Upper Valley since 2018.

About Us

Some places earn a 4.7-star reputation one transaction at a time. Brownsville Butcher & Pantry has been doing exactly that since opening its doors in 2018 on VT-44 in Brownsville, building a following among locals, ski-trip visitors, and anyone who detours off the mountain when they realize there's something genuinely special happening here. The space is warm and rustic, the kind of room that makes you linger longer than you planned.

At the core of everything is a commitment to whole-animal butchery done right. The team works with sustainable sourcing for both its meat counter and its seafood case, and the produce on the shelves comes from regional growers rather than a distant distribution center. That philosophy runs through every corner of the shop, from the wine selection to the artisan bakery. This isn't a convenience stop; it's a destination that happens to be convenient.

Brownsville Butcher & Pantry has grown into a genuine community anchor for the Upper Valley, running outreach programs and catering events that range from intimate weddings to large celebrations. Ski weekends, summer day trips, or a Tuesday afternoon when you just want a great meal and a well-stocked pantry to browse, the market meets you wherever you are.

What We Offer

The café runs breakfast, lunch, and dinner six days a week, drawing on the same locally sourced ingredients that stock the market shelves. Whether you're pulling up a seat after a morning on the slopes or stopping in on a summer afternoon, the kitchen is turning out food worth the detour.

Beyond the café, custom meat cutting orders let you get exactly what you need for a dinner party or a week's worth of meals. The sustainable seafood counter sits alongside the butcher case, and the grocery and pantry section stocks wine, local produce, and everyday staples. The artisan bakery rounds out a shopping trip with fresh-baked goods that rarely last long on the shelf.

For events, the team offers full catering services and a mobile wood-fired pizza setup that travels to weddings and private gatherings. Gift cards are available for anyone who wants to share the experience. The market also sources produce directly from local growers, so the connection between farm and table is short and transparent.

"What a find. We stopped here with friends and family during a ski getaway and ended up leaving with far more than breakfast. The space is warm, welcoming, and beautifully done. Rustic in character, but clearly thoughtful and well executed, it feels either newly built or recently renovated without losing that classic Vermont charm. The staff were genuinely kind and attentive from the moment we walked in. Not polite in a scripted way, but truly welcoming. The food was outstanding, and the care behind it was obvious. Farm-to-table here is not a buzzword. It feels lived, intentional, and rooted in a real story. You can feel the love that went into building this place. We had a party of nine, including five energetic kids, and the team handled it effortlessly. The kids were welcomed, accommodated, and even complimented on their manners, which says a lot about the atmosphere they’ve created. If you find yourself anywhere near Brownsville, Vermont, this is a must-stop. Come for a great meal. Leave with provisions, quality meat, maybe a bottle of wine, and the kind of neighborly welcome that makes you feel like you belong there, even if it’s your first visit. Highly recommended."

"Really nice butcher shop with a restaurant. We had the pastrami sandwich which was really incredible. They also have a large coffee selection. I was surprised to find such a high quality restaurant in a small town as it is definitely much nicer than most small town places. I would definitely come here again."

"We just had a couple of specials, a pulled pork sandwich and a chicken salad wrap. Oh and french fries that were really good. They were very busy but the wait was not long at all."

"I’ve been here many times over the last few years for exceptional pastries, coffee and the best sourdough bagels around. We decided to try the days seafood and were not disappointed. My husband had the soft shell crab sandwich which he said was delicious. I had the lobster roll which was one of the best I’ve had in my life; and never expected from the land locked state that is VT. I spent much of my life on Cape Cod and in MA; I did not imagine this fresh delicious lobster roll that I happily devoured. Thank you and well done!"

"I love the Butcher Shop. Their meats are top cut. The guy behind the counter knows his stuff. And, it’s service with a smile. Parking can be tight, especially for us F-150 drivers, but that is to be expected at a popular joint like this. The bakery products are delicious. The croissants are to die for! I have not (yet) sampled the sandwiches and salads - the crowd suggests I should. And, I will!"
